Hi everyone - my Grilled Pizza recipe makes a great appetizer, light lunch, or a fun dinner when you toss in a fresh green salad!
Remember - you can always add a protein component like lean chicken - and pile on some different veggies depending on what you like. Now naturally, you can make your own pizza dough and pesto sauce if you like, yet the purpose of using store bought ingredients is so you can always have them on hand to pull it together quickly!
Prep time: 20 minutes
1 10 oz. can refrigerated All Ready Pizza Crust (You can find this in the refrigerated section by the eggs, butter, etc. -
1/3 cup purchased pesto sauce (you can also use home made if you prefer)
2 Italian plum tomatoes, sliced
1 cup small broccoli florets
1 small yellow summer squash, thinly sliced (1 cup)
6 oz. (1 1/2 cups) shredded mozzarella cheese
STEP 1 - GRILLING DIRECTIONS: Heat grill - Lightly grease 12 inch pizza pan or 13X9 inch pan. Unroll dough; place in greased pan - starting at center, press out with hands.
STEP 2 - When ready to grill, place pan on gas grill over medium heat or on a charcoal grill 4 to 6 inches from medium coals. Cover grill; cook 5 minutes or until crust just begins to brown.
STEP 3 - Remove crust from grill; spread pesto evenly over partially baked crust. Arrange vegetables over pesto, sprinkle with cheese.
Return pizza to grill - cover grill - and cook 10 minutes or until crust is a deep golden brown and cheese is melted.
